Pan Roasted Herb Potatoes

Hello there,
How are you today?
I made this easy pan roast potatoes and sauteed cabbage a while ago from my Abuja veggie buys and thought to share this with you. Sometimes I like to switch off and on, on the things I eat, this time I was on a meatless diet for a few days, usually I would replace meat with mushrooms, eggs, tofu or nothing.  I like potatoes anyhow, boiled, baked, mashed and this time pan roasted. This recipe is very easy and straight forward, you can switch up the seasoning and herbs as you would prefer. Serve as a side to grilled chicken or in my meatless case, serve with a side of veggies or even a simple tossed salad.



You'll need:
- Potatoes, peeled and chopped
- Onions, chopped
- Fresh dill, chopped
- Fresh parsley, chopped
- Turmeric
- Cumin
- Salt and black pepper
- Oil

Step1- Peel and cut the potatoes into 2 inch cubes, boil in salted water until the potatoes are just cooked, you do not want them too soft.
Step2- In a non-stick pan over high heat, add 2 TBsp of oil, add onions and potatoes at the same time, let it start to cook, the high heat would help the potatoes crisp up and brown, cook for about 1 min on each side.
Step3- Turn heat to medium low, add turmeric, cumin and pepper, since you salted the boiled potatoes, you may not need to add more salt, however taste a piece to confirm.
Step4- Add chopped herbs, move the potatoes around and turn off the heat.
Step5- Serve and enjoy!
