Akara Pancake and Roast Veggie Wrap

Welcome back to my blog, it's been a minute but here we are again!
I recently saw a Vlog post from a popular Nigerian blogger where she made Akara pancake.
Lets take two steps back, so Akara is a popular Nigerian bean fritta or fried bean ball made by grinding peeled beans with peppers, onions into a thick paste, seasoned and deep fried almost like a falafel, so just imagine that made like a pancake.

So I was just chilling and thinking about what to eat and remembered someone had gifted me some bean flour, I had one tortilla in the refrigerator and some vegetables, taadaa... light bulb moment and that is how this meal came about. It was warm and delicious, crunchy and very filing, all in all it was worth trying.

When I do this again, I will definitely try different veggies, maybe some steamed cabbage and carrot, with some ground beef or chicken, I'll cook the beef or chicken in a thick sauce to make my wrap juicy and nice. I actually wish I had some type of sauce with this. The veggies were juicy and the Akara pancake was very flavorful so it tasted very good.

If you're like me, you must be tired of the same 'ol way of doing things, constantly looking to spice up both in the kitchen and life *wink wink*

Lets make it!
You'll need:

- Bean flour
- Tortilla wrap
- Carrot
- Green beans
- Onion
- Salt and pepper
- Cayenne pepper/ dry pepper
- Chicken bullion base 

Steps.
1. In a bowl combine 1/2 cup of bean flour, 1tsp of salt, pepper/cayenne, bullion base, diced onion and 1/2 cup of water. Mix and let this seat for 20 mins so that the bean powder can re-hydrate while you prepare other ingredients. The consistency should be like melted Ice cream, thick yet runny.

2. Peel and chop carrots into chunks, clean green beans and leave them whole, slice onions into half moons.
3. In a non-stick pan add one Tbsp of vegetable oil, add all the veggies and pan roast on medium high heat. You may see some char on the veggies, keep it moving until the carrots are tender but still crunchy. Add salt and pepper. Remove from pan.
4. In the same pan, add a drizzle of oil, swirl it around the pan, pour in the bean paste and fry like a pancake, about 1 min on each side. Remove the pancake from the pan.
5. In the same pan warm up the tortilla for about a min.
6. Wrap in this order- Tortilla, Akara pancake, veggies, roll up the wrap, put the seam side down in the hot pan to help the wrap seal up, turn off the heat.

7. If you're ready to eat serve yourself some if not you can freeze this and warm it up in a hot oven later.
