So this Saturday morning I woke up at 10/11-ish because I was watching Iroko TV until 4am... lol
I just love Saturdays, good time to slow down from all the hustles and bustles of the
week, sleep as long, lazy around and enjoy a delicious brunch.
Lets make some pancakes!
You'll need...
All-purpose flour- 2cups
Baking powder- 2tsps
Milk (used soy milk)- 1cup and half
Melted butter- 2Tbsp
Egg (yolk and whites)- 2 eggs
Sugar- 2Tbsp
Water- half cup
Salt- 1tsp
- Mix all the dry Ingredients together
- Mix all the wet ingredients together except the egg whites
- Combine both into a thick batter
- Beat the egg whites until frothy and mix into the batter; I like to do this because it makes the pancakes light an fluffy.
Leave the batter to rest for about 5mins
Lightly grease a pan under medium-low heat with oil or butter
Spoon small portions into the pan
Watch for the bubbles and the flip.
How delicious looking!
I served with some eggs, turkey patties and mango slices, drizzled over
some syrup and a nob of butter.
