The Thai side of life...Red Thai curry with brown rice


Some weeks ago myself and a couple of friends visited a Thai restaurant,
I ordered their Red Thai Curry with brown rice and OMG!!!...It was da bomb-digidi...  
so you know I had to recreate it for sure!

Chicken breast
Coconut milk
Thai curry paste
Basil
Cilantro/coriander leaves
Red and green papers
Onions
Spring onions/scallion
Garlic
Fish sauce
Corn
Vegetable oil
Lime zest and juice

NOTE!- chef in this video made the curry paste from scratch.

what i would do differently...
- add the cilantro, spring onions and basil when the soup is ready,
so that they hold color and crunch.
- may cut the peppers in one-inch cubes rather than strips.

  1. Ahhhhh Lode made a special plain okro soup yesterday. .. I mean okra that will have to go with stew. Ohhhhhhh it was something else. Hv told her to post the recipe on your blog. It will be selfishness if it is not shared with the rest of the world.
